This is a very delicious, filling ,nutritious, fibre rich recipe. It can be prepared in advance and served chilled as well. Here is the recipe to make gluten free, dairy free and sugar free sorghum porridge.
Ingredients (for 2 pax):
1. Sorghum grains: 1/2 cup washed and soaked overnight
2. Coconut: 1/4cup grounded( fresh or dry)
3. Dry fruits: 1/4 cup like cashews, pistachios etc
4. Dates : 4-5 pieces very finely chopped
5. Saffron strands: 2
6. Cardamom pods: 2-3
7. Coconut oil(extra virgin): 1-2 tbsp
8. Coconut cream or any other milk of your choice: 1/2 cup
9. Water: 3-4 cups
Recipe:
1. Grind soaked sorghum grains coarsely.
2. Put these grounded sorghum in a pressure cooker or a heavy bottomed deep pan.
3. Add 2 tbsp of oil. With clean hands mix the grains and oil nicely.
4. Put the cooker on a simmer gas flame, cover it and let the sorghum roast until they stop sticking at the bottom or give a nice roasting aroma. Keep turning them to avoid burning.
5. Now add chopped dry fruits, coconut, saffron strands and 3 cups of water.
6. Let the water come to a boil. Now close the cooker and let it cook for 3-4 whistles. If you are using a pan then add little more water, cover the pan and let it cook on a simmer flame for around 10-15 mins. Keep turning the mixture to avoid sticking at the bottom. You can also add more water if you feel it is needed.
7. Open the cooker after it is cooled. The mixture would seem gooey. At this point, add chopped dates and close the lid again. This will allow the dates to blend with the mixture without losing sweetness.
8. Open the lid after 5 mins, mash and mix the dates well and add milk. Mix it well again.
9. Serve it with finely grounded cardamom powder and chopped nuts.
