How to make savoury chickpea pancakes

Chickpeas pancakes is a gluten free, dairy free, simple to cook , vegetarian, protein packed yet delicious dish which can be served with many condiments and can act as a replacement to tortilla or bread in many dishes. It is a very nice breakfast , lunch or dinner meal option . It is also called as Socca in middle-east and Cheela in India. So, let us learn how to make chickpea pancakes.
Ingredients: for 2 pcs
– Chickpea flour – 1/2 measuring cup
– Water for mixing
– Nigella, fennel and sesame seeds- 1/4 tsp each
– Oil for cooking – 1/4 cup measuring approx.
– Finely chopped vegetables like grated carrots, onion, tomato, cilantro etc .
– Salt to taste
Steps to make Chickpea pancakes:
— Take a long bottom jar or cup and add chickpea flour, seeds and salt.
— Add 1/4 measuring cup of water in the beginning and mix the flour so that all lumps are removed.
— Now add around 1/2 measuring cups of water and mix the batter . The batter should not be thick . It should have a consistency of a runny egg yolk.
— Add in all the vegetables and mix them.
— Put a pan on the gas. Add 1 tsp of oil and 1-2 drops of water and cover the pan .
— Switch on the gas to a low flame. Gradually you will hear the sound of oil splattering. Do not remove the cover until the noise stops completely. This will season the pan very nicely.
— Now that the pan is hot enough. Add 1 tsp of oil, give the batter a stir and pour 2 ladle full of batter on the pan . Roll the pan with the hands or with the help of back side of the ladle, spread the batter in a circle.
— Drop 1 drop of oil, each on 4 sides of the circle and one in the centre of the circle.
— Cover the pan for 3-4 minutes. Remove the cover and let the pancake cook for 2-3 minutes in open.
— Flip the pancake upside down using a spatula and let it cook again for 2 minutes without cover.

Your savoury chickpea pancakes are ready. Spread a good amount of ghee or butter on the pancakes and enjoy them with different relishes, jams, chutneys or just make a quesadilla of it and enjoy. You can also add herbs, cheese on the top at the end, if you are dairy friendly. There are many creative ways to savour them.
