
Let us learn how to cook buckwheat porridge.
Buckwheat is a grain which is widely found in Asia, Europe and Americas. It is gluten-free and has many important antioxidants and amino acids which are not present in regular grains. Hence, we should make an effort to incorporate this cheap grain as a part of our diet .This recipe is a very delicious ,quick and easy to prepare gluten- free and sugar free option.
Please remember that it needs some preparation in the night before. Also the recipe can be tweaked according to ones preferences.
Ingredients for 2 pax :
buckwheat groats–1/4 cup
coconut milk/almond milk-1/2 cup
dates–3-4
fresh/dry coconut grated in blender –1/3 cup
pistachio & cashew nuts roasted & coarsely broken –1/2 cup
water–2 measuring cup
saffron, vanilla pods & cardamom
banana—1-2

Recipe:
In the night before:

1.Firstly, coarsely grind buckwheat groats.

2. In a bowl, add broken buckwheat groats, nuts, saffron, vanilla and coconut.
3. Add 2 cups of water. Cover and let the ingredients soak for over night.
Next day:

1. Put soaked mixture in a cooking pan and add 2 cups of water.
2. Cover the pan and let it cook on low flame for around 10 minutes.
3. Keep checking in between and when it seems cooked, switch off the flame and add chopped dates, coconut milk, grounded cardamom while the pan is hot.
4. Cover the pan and keep it aside for 5 minutes until the dates become soft.
5. Serve it with chopped banana.
